Lazy Kitchen Ep. 21: Christmas Chocolate Chip Cookies

Happy new year! This is a few steps away from a non-lazy recipe. But the holiday season always turns me a bit manic. :)

Introduction: Christmas Chocolate Chip Cookies

Making chocolate chip cookies is a skill I’ve always wanted to tick off my list. There’s something comforting and impressive about serving cookies fresh off the oven. And it’s a handy snack or dessert to have around.

For the longest time, I had no idea how to work an oven. (I’m still feeling it out as I go). But I was able to make basic white bread and croissants. Cookies can’t be that hard.

Cookie factory. I made an unbelievable amount of cookies this holiday season (clocking in to close to a hundred). It’s good that I have family, friends and neighbors to feed.

My mom’s preferred cookies are crispy on the outside but chewy on the inside. My favorite cookies remain in my memory; it’s this local brand of healthy-sweet oatmeal cookies in a jar that they sell in gasoline station convenience stores. I can’t remember the brand though…

I can assure anyone trying out this recipe that it tastes great (especially when fresh, but even several days later). Santa, at the very least, can’t complain*.

*Also, it’s always the thought that counts. At least for Christmas.

Ingredients: Chocolate Chip Cookies

In our tiny oven! You may have to change the temperature/time settings depending on your oven. Also, the scent of baking cookies should be bottled up for sad days. I’ll miss having this sensory privilege when I move back into the condo.

I pumped an amazing amount of sugar into my family’s veins this last holiday season. I even made a chocolate cake, which I’ll probably write about later.

  • 1 cup butter, softened
  • 0.5 cup white sugar
  • 1.5 cup light brown sugar
  • 2 medium-sized eggs
  • 2 tsp vanilla extract
  • 1 tsp baking soda dissolved in 2 tsp hot water
  • 0.5 tsp salt
  • 3 cups all-purpose flour
  • 2 cups dark chocolate bar, chopped
  • 1 cup semi-sweet chocolate chips

Making the cookie dough. I’ve been through this so many times –with some failures but more successes– that I’ve finally made an edit of what it looks like each step (at least for me). And yes, unbaked cookie dough is delicious. Somehow. The last photo almost looks like coffee-flavored ice cream.

Prep time: 30 minutes

Bake/Cook time: 10 minutes

The first time I tried making cookies, it took me a little over an hour. It’s a learning curve!

  1. Using an electric mixer, combine the softened butter, white sugar, and brown sugar until it is well-incorporated but still grainy though maybe that’s just the quality of our sugar. [A]
  2. Mix in the following ingredients one at a time: eggs, vanilla extract, baking soda and salt. The mixture will be creamier. [B]
  3. Add 1 cup of all-purpose flour at a time. Continue to mix with the electric mixer. You can use the dough hook. You don’t need to completely mix in the flour [C]; it’s okay to have some white bits here and there.
  4. Fold in the chopped dark chocolate pieces using a spatula. [D] If possible, let your dough rest in the fridge overnight.
  5. Pre-heat oven to 170 C.
  6. Using an ice cream scoop (or honestly just a spoon or your hands), portion out and shape the dough onto parchment paper.
  7. Top with as many semi-sweet chocolate chips as you want.
  8. Bake cookies at 170 C for 8-12 minutes.
  9. Enjoy the sweet aroma of chocolate chip cookies baking in the oven. Then consume to your heart’s content! (And share with others I suppose).
